Timeless & Useful Baking Tips


These tips that can be used when baking , there come from baking and cooking books from the 1940s - 1950s


BAKING
~ Add a tsp of jam/ jelly to cookie dough- its adds flavour and makes the cookies stay moist longer.

~ Measure butter after melting , not before. If the recipe calls for melted butter.

~ If you struggling to whip cream add a few drops of lemon juice.

~ Adding a tsp of peanut butter to each muffin pan , adds a nutty flavour to muffins .

~ To avoid lumps in batter add a pinch of salt.

~ Custard will not curdle if you add a tsp of flour mixed with sugar is added.

~ butter & sugar can be creamed easily when butter is hard by warming the sugar slightly.

 ~ Never beat egg whites in a aluminum pan, it darkens them.

~ Sugar doughnuts by shaking  them in a paper bag with sugar.

 ~ add a sprinkle of ginger to chocolate icing , it gives an unusual flavour.

~ Pastry will be more flakey if 1 tblsp of orange or lemon juice is added to a part of the liquid.

~ A wired cheese cutter can be used to cut cookies.

COOKING

~ Make French toast crisper by adding a tablespoon of flour to the egg & milk mix.

~ save bacon drippings , as they are useful for seasoning vegetables , soups, and white sauces

~ When baking bread , don't preheat the oven , just pop in the bread pans immediately.

~ Make mash potatoes fluffy by adding baking powder
